* Exported from MasterCook * Mango Pie Recipe By : Sue Serving Size : 8 Preparation Time :0:00 Categories : Volume 14-04 Apr 2011 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 9 inch unbaked pie crusts 5 cup fresh mango -- peeled and sliced 1 teaspoon lime juice 1 cup sugar 1/4 cup all purpose flour 1/4 teaspoon chipotle chile powder -- or to taste 2 tablespoons butter Preheat oven to 425F. Mix mango and lemon juice in a large bowl. Mix sugar, flour and cinnamon then stir into the mangoes. Pour into crust and dot with butter. Cover with top crust, seal and flute. Cover edge with 2- or 3-inch strip of aluminum foil to prevent excessive browning; remove foil during last 15 minutes of baking. Bake until crust is brown and juice begins to bubble through slits in crust, 35 to 45 minutes. Variation: Brown Sugar Mango Pie: Substitute 3/4 cup packed brown sugar for the white sugar. NOTES: Based on the Betty Crocker Cookbook recipe for peach pie. I'd heard about Mexican street food--slices of mango on a stick sprinkled with lime juice and chile powder--and wanted to try the flavors in a pie. Everyone has LOVED this. Back to Recipe List * Exported from MasterCook * Mint Chocolate Chip Cake Recipe By : Cook's Country, February 2011 Serving Size : 10 Preparation Time :0:00 Categories : Volume 14-04 Apr 2011 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 cups mini chocolate chips 1 1/2 teaspoons mint-flavored extract 5 drops green food coloring 20 tablespoons (2 1/2 sticks) unsalted butter, cut into 20 pieces and softened 8 ounces bittersweet chocolate, melted and cooled 1 teaspoon vanilla extract 1/8 teaspoon Salt 2 cups confectioners' sugar For the cake: Adjust oven rack to middle position and heat oven to 350F. Grease and flour three 8-inch cake pans. Prepare white layer cake batter according to directions, stirring 1 cup chocolate chips, mint extract, and food coloring into batter until combined. Scrape equal amounts of batter into prepared pans and bake until toothpick inserted in center comes out clean, 20 to 25 minutes. Cool cakes in pans 10 minutes, then turn out onto wire rack. Cool completely, at least 1 hour. For the frosting: With electric mixer fitted with whisk attachment, beat butter, melted chocolate, vanilla, and salt on medium-high speed until combined. Reduce speed to medium-low. With machine running, slowly add confectionery sugar and mix until smooth, about 1 minute. Increase speed to medium-high and beat until light and fluffy, 3 to 5 minutes. To assemble: Place 1 cake round on serving platter. Spread 3/4 cup frosting over cake, then top with second cake round. Spread another 3/4 cup frosting over cake, then top with third cake round. Spread remaining frosting evenly over top and sides of cake. Press remaining chocolate chips onto sides of cake. Serve. Let sit for 10 - 15 minutes or so and devour. These are so refreshing and I am drooling as I write this.....mmmmm Have stir fried these too.
