* Exported from MasterCook * Ricotta Pancakes with Plum Sauce Recipe By : Good Housekeeping August 2003 Serving Size : 4 Preparation Time :0:00 Categories : Volume 14-03 Mar 2011 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- *Plum Sauce* 8 large ripe plums, pitted (about 1 1/2 pounds) 1/4 cup sugar 1 teaspoon fresh lemon juice *Ricotta Pancakes* 3 large eggs -- separated 1 cup part-skim ricotta cheese 1/3 cup whole milk 1/2 teaspoon vanilla extract 1/2 cup all-purpose flour 1 tablespoon sugar 1/4 teaspoon baking powder 1/8 teaspoon salt 1 tablespoon margarine or butter -- cut into 3 slices Plum Sauce Pulse the plums in a food processor with the knife blade attached just until coarsely chopped then transfer them to a 2-quart saucepan and cook them with the sugar over medium heat for 20 minutes or until the mixture thickens slightly; stir occasionally. Stir in the lemon juice. Makes about 2 1/3 cups. Ricotta Pancakes In a blender or food processor with the knife blade attached, blend the egg yolks, ricotta, milk and vanilla until smooth. Add the flour, sugar, baking powder and salt, blend until smooth; transfer the batter to a medium bowl. In a small bowl, with the mixer at high speed, beat the egg whites just until stiff peaks form. With a rubber spatula, fold the beaten whites into the batter. In a 12-inch skillet, melt a third of the margarine over medium heat. Drop the batter by scant 1/4-cups into the skillet, making 5 to 6 pancakes at a time. Cook 3 to 4 minutes or until the edges look dry and the bottoms are brown. Turn the pancakes over and cook 2 to 3 minutes or until bottoms are brown. Transfer to a platter and keep warm. Repeat with the remaining margarine and batter to make 16 pancakes in all.
