* Exported from MasterCook * Mussels with Chilli and Garlic Recipe By : Serving Size : 2 Preparation Time :0:00 Categories : Volume 14-03 Mar 2011 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 kilogram ready-to-cook live mussels (just over 2 pounds) 2 big , juicy garlic cloves 1 fresh red chilli 2 tablespoons olive oil Wash mussels under running cold water and shake off excess. Peel and finely chop garlic. Deseed and finely chop chilli. Heat olive oil in a large skillet, add mussels, garlic and chilli, stir well. Cover the skillet and cook for 5-7 minutes, shaking the skillet occasionally. When all the mussels are opened, divide them between 2 warm bowls and pour the juices on top. Serve with plenty of crusty white bread and cold white wine. Serves 2.
