* Exported from MasterCook * Greek Chicken Wrap with Tzatziki Sauce Recipe By : Art Guyer Serving Size : 8 Preparation Time :0:00 Categories : Volume 14-02 Feb 2011 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- For the sauce: 2 cups fat-free plain yogurt 1 cup peeled, seeded and finely diced cucumber 2 tablespoons chopped fresh dill 1 tablespoon lemon juice 1 tablespoon white vinegar 2 teaspoons minced garlic salt, to taste For the wrap: 3 boneless, skinless chicken breast halves 1/4 cup Italian dressing 2 tablespoons olive oil 4 large garlic cloves, chopped 1 cup red onion, thinly sliced 3 cups chopped arugula 1 cup roasted red peppers, thinly sliced 8 jumbo black olives, pitted and sliced 1 cup Feta cheese, crumbled 8 large flour tortillas For the sauce: In a medium bowl, combine all ingredients until blended. Sauce may be made up to 2 hours in advance. Cover and refrigerate until serving. For the wrap: Place chicken breast in a large plastic bag and add Italian dressing. Let the chicken marinate for 15 minutes; pound (using a meat mallet or the bottom of a heavy skillet) and flatten to about 1/2-inch thickness; remove chicken. In a large non-stick skillet over medium heat, cook chicken breast about 5 minutes per side or until nicely browned and cooked through. Place chicken on a cutting board and slice thinly against the grain; set aside. Cover with foil and keep warm. In the same pan, heat olive oil to near smoking. Saute onions and garlic for a few minutes. Add arugula, peppers and olives, cook for one more minute, remove from heat. Warm tortillas in microwave oven for 30-45 seconds. Place one tortilla on a plate and spread 1/2 cup of the vegetable mixture and 1/8 of the chicken slices on top. Sprinkle two tablespoons of Feta cheese on top. Spoon some of the tzatziki sauce over other ingredients and roll up tortilla. Wrap in waxed paper and cut in half for plating and serving. Repeat with remaining tortillas. Serve immediately with additional sauce on the side. Note: Conceived by Art after a great lunch at Carmine's Italian Restaurant February 2011.
