* Exported from MasterCook * Irish Cheese and Leek Scone Bread Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Volume 13-12 Dec 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup butter -- 2 ounces 1 large leek -- sliced 1 handful chopped parsley -- large handful 1 bunch thyme -- small bunch, chopped 6 tablespoons mature English cheddar cheese -- 2 5/8 ounces 3/4 pound self-raising flour 2 teaspoons wholegrain mustard 1 large egg -- beaten Black pepper Milk -- to mix To make the cheese and leek scone bread, melt the butter in a heavy-based frying pan, add the leeks and fry very gently, stirring now and then, for 10 minutes. Mix the parsley and thyme into the fried leek and set aside to cool. In a bowl, combine the cheese, flour, leek and herb mixture, mustard and egg, season with salt and freshly ground pepper and add enough milk to form a dough. Press the dough into a round on a greased baking sheet, then partially cut into eighths. Bake in a preheated oven at 375F/190C/gas 5 for 45 minutes. Serves 8.
