* Exported from MasterCook * Orange Chocolate Chip Cookies Recipe By : Serving Size : 24 Preparation Time :0:00 Categories : Volume 13-11 Nov 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup shortening 1 egg yolk 1/2 cup orange marmalade 1/2 teaspoon vanilla 1 cup all-purpose flour 1/2 teaspoon salt 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon ground cinnamon 1/2 teaspoon ground nutmeg 1/2 cup semi-sweet chocolate chips 1/2 cup chopped pecans In a small bowl, cream the shortening, egg yolk and marmalade until light and fluffy. Beat in vanilla. Combine the flour, salt, baking powder, baking soda, cinnamon and nutmeg; add to creamed mixture and mix well. Stir in chocolate chips and pecans. Drop by tablespoonfuls 2 inches apart onto greased baking sheets. Bake at 350F for 12-15 minutes or until lightly browned. Remove to wire racks. Back to Recipe List * Exported from MasterCook * Orange Marmalade Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 13-11 Nov 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup orange juice 12 ounces cranberries, either fresh or frozen 1/4 cup water 1/2 cup Splenda brown sugar blend 1/2 cup white sugar 1/4 teaspoon cinnamon 1/2 teaspoon grated orange rind Put cranberries into slow cooker, add all ingredients. Stir well together, cover and cook on high for four hours. Stir cranberries every hour, push berries down into liquid. After 4 hours, check for thick and if still not thick enough let it go another hour. First time we had to add another hour, so will compensate next time. From another Mac Head! Old Doug in BC Contributed to the FareShare Gazette by Doug; 12 November 2010. www.fareshare.net - - - - - - - - - - - - - - - - - - - Back to Recipe List * Exported from MasterCook * Orange Marmalade Cookies Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 13-11 Nov 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- For the Cookies 2 cups sugar 1/2 cup Crisco 2 eggs 1 cup sour cream 1/2 cup orange marmalade 4 cups all-purpose flour 2 teaspoons baking powder 1 teaspoon baking soda 12 teaspoons salt For the frosting 3 cups powdered sugar 1/2 cup butter -- at room temperature 1/4 cup orange marmalade Orange juice if necessary In a large mixing bowl, combine sugar, shortening and eggs; beat until well mixed. Add sour cream and marmalade; mix well. Add remaining ingredients and mix well. Chill dough in the refrigerator for 1/2 hour or until cool. Meanwhile, preheat oven to 400 degrees F and coat 2 baking sheets with cooking spray. Prepare frosting; in a medium mixing bowl, beat all frosting ingredients together, adding orange juice only as needed to make frosting spreadable. Set frosting aside. Remove dough from refrigerator. Using a teaspoon, drop rounded spoonfuls of dough onto prepared baking sheets. Bake for 8 to 10 minutes or until lightly browned on edges. Remove from oven and cool on a wire rack.
