* Exported from MasterCook * Gravy Master Substitute Recipe By : Art Guyer Serving Size : Preparation Time :0:00 Categories : Volume 13-10 Oct 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup sugar 1/4 cup water, divided 1/8 cup soy sauce 1/8 cup apple cider vinegar 1/8 cup Worcestershire sauce 1/4 teaspoon granulated garlic powder 1/4 teaspoon onion powder 1/8 teaspoon salt To caramelize sugar: In a small, clean, dry saucepan put a half-cup of sugar and stir slightly to allow the sugar to rest in an even layer on the bottom of the pan. Turn the burner on to medium heat. If you are using gas, you should watch the sugar closely, as gas cooks hotter than electric heat. Add a 1/8 cup water to the pan and stir constantly with a wooden spoon. Keep scraping down the sides of the pan to keep the sugar cooking consistently. Stir the mixture until it reaches a boil. Swirl the pan around to keep the syrup moving until it begins to turn amber brown. Take the pan from the heat just before it has reached the desired color. If you are making a dark brown caramel or are worried about over-cooking, put the pan in an ice bath after removing it from the burner. To make the Gravy Master Substitute: Add the remaining ingredients to the warm pan, including 1/8 cup water and heat at low temperature. Stir until the mixture has combined. Store in a sealed container in the refrigerator. Note: I experimentally made this in September 2010. I guess I should buy a bottle of the stuff to see how close I came! It seemed to work fine! I used this in the Roasted Onion and Shallot Gravy recipe I made.
