* Exported from MasterCook * Asparagus wrapped in Pancetta Recipe By : Debbie Mosimann Serving Size : 4 Preparation Time :0:00 Categories : Volume 13-10 Oct 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 slices Pancetta, very thin 24 stems fresh asparagus 1 pinch salt Pancetta is found in the deli case at your grocery. It is the Italian version of bacon and comes in 4-inch diameter rounds. For this recipe you want to ask for it to be sliced paper thin. In a flat sauté pan bring 2 cups of water to a boil. Snap the woody ends off of the asparagus. They will naturally break where the tender part starts. Drop the asparagus into the boiling water several stems at a time just 30 seconds until they turn bright green. Carefully remove them with a slotted spoon or kitchen tongs. Allow to cool slightly Wrap one slice of pancetta around 3 stems of asparagus. Brush tips with olive oil. Heat the grill. Place on the grill turning often till the pancetta is crisped.
