* Exported from MasterCook * Impossible Pumpkin Pie Recipe By : Don Calkins Serving Size : 8 Preparation Time :0:00 Categories : Volume 13-07 Jul 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 ounces evaporated milk 2 cups pumpkin -- solid pack 2 tablespoons butter -- softened 2 eggs 1/2 cup sugar 1/2 cup basic baking mix 1 teaspoon allspice 1/2 teaspoon ginger 1/4 teaspoon cloves 1/8 teaspoon cardamom 1 teaspoon vanilla Heat oven to 350F. Grease pie plate, 10 x 1 1/2 inches. Beat all ingredients until smooth. A blender works better than a mixer. Pour into pie plate. Bake 50 to 55 minutes or until knife inserted in center comes out clean. You can also use canned yams. This requires 2 small cans. High Altitude Directions (3500 to 6500 ft.): Bake about 55 minutes.
