* Exported from MasterCook * Jerk Chicken Recipe By : Bernie Thomas Serving Size : 6 Preparation Time :0:00 Categories : Volume 13-06 Jun 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 boneless skinless chicken breast halves Pulse together: 1 red onion 3 garlic cloves -- coarsely chopped 1 tablespoon grated ginger root -- coarsely chopped 1 hot pepper -- coarsely chopped 1/2 cup cilantro -- coarsely chopped Add: 1/4 cup cooking oil 1/4 cup light brown sugar 3 tablespoons red wine vinegar 3 tablespoons orange juice concentrate 1 teaspoon soy sauce 2 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon allspice 1/4 teaspoon cloves Mix above ingredients till well-blended; pour over chicken and marinate several hours or overnight. Chicken breasts (boneless and skinless) are SO thick I always pound to tenderize and to insure quick and even grilling. Serves 6.
