* Exported from MasterCook * Individual Cherry Cheesecakes Recipe By : Marian Platt, Sequim, WA Serving Size : 24 Preparation Time :0:00 Categories : Volume 13-06 Jun 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 24 vanilla wafer cookies 16 ounces cream cheese -- softened 3/4 cup sugar 2 eggs 1 teaspoon vanilla extract 21 ounces cherry pie filling -- (1 can) whipped topping Place one cookie each in the bottom of 24 greased muffin cups. In a mixing bowl, beat cream cheese and sugar until smooth. Add eggs and vanilla; beat well. Divide filling over muffin cups. Bake at 375 F. for 20 minutes. Chill before removing from cups. To serve, top with pie filling and a spoonful of whipped topping. Yields 24 servings.
