Remove yolks and set whites aside. In a small bowl, mash yolks with other ingredients. Evenly fill the egg whites. Lightly sprinkle with paprika if desired. Chill until ready to serve. 16 servings. Back to Recipe List * Exported from MasterCook * Fresh Strawberry Bars Recipe By : Better Homes and Gardens Serving Size : 24 Preparation Time :0:00 Categories : Volume 13-04 Apr 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 cup butter, softened 3/4 cup peanut butter 1 cup packed brown sugar 1/2 cup granulated sugar 2 teaspoons baking powder 1/4 teaspoon salt 2 eggs 1 teaspoon vanilla 2 1/4 cups all-purpose flour 1/2 cup strawberry jam 4 cups small whole strawberries, halved or quartered Heat oven to 350 degrees F. Line 13x9x2-inch baking pan with foil, extending foil beyond the edges. Set aside. In large mixing bowl beat butter and peanut butter on medium to high for 30 seconds. Beat in sugars, baking powder and salt until combined. Add eggs and vanilla; beat until combined. Beat in as much flour as you can with mixer. Stir in remaining flour. Spread dough in prepared pan. Bake 25 minutes or until top is lightly browned and toothpick inserted near center comes out clean. Cool completely on rack. Remove from pan by lifting foil. Spread jam and top with berries. Cut into bars. Serve at once or refrigerate up to 6 hours. Makes 24 bars Make Ahead: Wrap the peanut butter base in foil; store at room temperature up to 24 hours. Before serving, top with jam and berries. Or freeze the peanut butter base in a freezer container up to 3 months. Back to Recipe List * Exported from MasterCook * Fruit Salsa Quesadillas Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Volume 13-04 Apr 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup chopped peeled peaches 1 quart strawberries, hulled and diced 1 cup blueberries 1 tablespoon chopped fresh cilantro (optional) 1 tablespoon honey 1/4 cup sliced green onions (scallions) 12 (8-inch) flour tortillas 1 1/2 cups shredded part-skim mozzarella cheese Preheat oven to 475F. Prepare Salsa: Place peaches, berries, cilantro (if using), honey and green onions in a medium bowl and mix well. Prepare Tortillas: In the center of each tortilla, place 2 tablespoons shredded cheese and about 1/4 cup salsa. Fold over and place a toothpick at the end to hold the tortilla together. Repeat with remaining tortillas. Place filled tortillas on a nonstick baking sheet and bake for about 4 to 7 minutes or until lightly browned and the cheese is melted. Serve immediately.
