Drink Coffee Cherry Queen Cookies - MJS

2 cups flour
1 teaspoon baking soda
1 cup butter -- at room temperature
[2 sticks or 1/2 pound]
1 cup packed brown sugar
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
3 cups old-fashioned rolled oats
1 cup toasted walnuts
1 cup dried Door County cherries

Shelly Mathison requested the recipe for Cherry Queens, a cookie she tried
at a cafe called Drink Coffee, 415 N. Bay Shore Drive, Sister Bay.

She wrote: "The owner, a woman named Rachel, bakes and cooks and has
wonderful cookies called Cherry Queens. They were moist, hearty and
delicious!"

Rachel Hass, owner, sent the recipe and wrote: "I am so flattered to have
received your recipe request. At Drink Coffee we do a full line of homemade
bakery products as well as hand-crafted, organic coffee, tea and espresso
drinks."

Preheat oven to 350 degrees F.

In small bowl, combine flour and baking soda. Set aside.

Using electric mixer with a paddle attachment, beat together the butter and
sugars until light and fluffy. Add eggs and vanilla and mix just until
combined. Stir in flour mixture, then add oats, nuts and dried cherries.

Drop 1 1/2-inch balls of dough onto ungreased cookie sheets. Bake in
preheated oven 10 to 12 minutes or until edges are golden. The centers will
look unset at this point. Cool on pans 1 minute, then transfer to racks to
cool completely.

Makes about 4 dozen.

Duckling and Apricots

1 duck -- about 6 pounds
1 teaspoon salt
1/2 teaspoon pepper
**Apricot Stuffing**
1 cup tenderized dried apricots
1 can apricot nectar -- (12 ounces)
3 garlic cloves -- chopped

(1) Rub the cavity of the duck with the salt and pepper; stuff and truss
the fowl. Prick its breast, legs and thighs several times with a fork.
Arrange the duck on a rack in a roasting pan and bake it at 325 degrees F
for 1 hour.

(2) Meanwhile, in a saucepan, simmer the apricots in the nectar until they
are tender, stirring often.

(3) In the container of an electric blender, combine the apricots and
garlic and whirl them on medium speed until the mixture is smooth. Drain
off and discard the duck fat.

At this point you may stop and continue later.

(4) Arrange the duck in a casserole, pour the apricot sauce over it, and
continue to cook it, uncovered, at 325 degrees F for about 45 minutes or
until it is tender.

Refrigerates, Freezes, Doubles

If desired, the duck may be quartered into serving-pieces, baked as
suggested then basted with the sauce. In this case, the stuffing may either
be omitted entirely or cooked in a separate baking dish.

Cooking: 1 hour, 45 minutes
Preheat oven: 325 degrees F
