* Exported from MasterCook * Lettuce Wrap Tacos Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Volume 13-03 Mar 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup cooked black beans [if canned, drain and rinse well] 1/2 cup frozen or fresh cooked corn 1 small Italian plum tomato, diced 2 tablespoons fresh cilantro 1 tablespoon fresh lemon juice or lime juice 1/2 teaspoon chili powder 8 Bibb lettuce leaves 1/2 cup shredded cheese 1/2 cup salsa In small bowl stir beans to chili powder together. Spoon 1/4 bean mix in center of each leaf. Top with the cheese and salsa. Tacos - Fold the sides of lettuce over filling. Burritos - Roll lettuce to enclose filling and tuck ends in. Then secure each with a toothpick. Feel free to toss in other spices and herbs if desired especially if fresh. Perhaps some fresh basil? Serves 4 ---> I know meat isn't on your menu these days, Philo, however I must mention that lettuce leaves work very well with all kinds of fillings. Art will confirm that I couldn't stop raving about a burger my husband and I had at a fast food place in North Carolina which was wrapped in an iceberg lettuce leaf instead of the usual bun, not only because of the lower carbs but there wasn't that huge amount of bread to get one's mouth around and a person could also actually taste the food (which in this case happened to be a GOOD thing). Of course, all kinds of leaves have been used as wraps and food holders for centuries. Oh, yes, they are completely biodegradable and very 'green' too. Maybe we should all start placing stacks of leaves on the picnic table this summer and forget the paper plates; if the leaves wilt a little that just makes them more pliable, right? ;-> H.
