* Exported from MasterCook * Kielbasa Skillet Stew Recipe By : Machelle Lewis, Henderson Nevada Serving Size : 6 Preparation Time :0:00 Categories : Volume 13-03 Mar 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 slices bacon 1 medium onion -- chopped 1 pound smoked fully cooked kielbasa -- - thinly sliced 2 cans great northern beans -- (15 1/2 oz) undrained 16 ounces tomato sauce -- (2 cans) 1 can chopped green chilies -- (4 ounces) 2 medium carrots -- thinly sliced 1/2 medium green pepper -- chopped 1/2 teaspoon Italian seasoning 1/2 teaspoon dried thyme 1/8 teaspoon pepper In a 12-inch skillet, cook bacon until crisp; remove to paper towel to drain. In drippings cook onion, and sausage until the onion is tender; drain. Stir in remaining ingredients; bring to a boil. Reduce heat; cover and simmer for 45 minutes or until vegetables are tender, stirring occasionally. Crumble bacon and sprinkle on top. The bacon and sausage provide rich flavor to this comforting stew. When I make this dish, I share a taste of my country memories with my family. Bobbie's Note: I cut this in half for 2 plus a third helping for a lunch. Very good. Would also be good with about 1/2 cup macaroni or other small pasta added.
