Essie's Cobbler

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 cup butter -- softened
1 cup sugar -- divided
1 cup flour -- sifted
1/4 teaspoon salt
2 teaspoons baking powder
1/2 cup milk
1 can fruit -- (15 ounces) drained
[save juice]
1/2 cup fruit juice

(I never measured fruit or juice, just used whatever was in the can.)

Cream butter and 1/2 cup sugar.
Mix together flour, salt and baking powder.
Stir in dry ingredients alternately with milk.
Beat till smooth.
Pour into a 2-quart casserole dish.
Spoon fruit over batter.
Sprinkle with remaining 1/2 cup sugar.
Pour fruit juice over top.
Bake 45-50 minutes at 375 degrees F.

Notes : I used a can of peaches and the juice in this recipe. We really
liked it topped with some whipped cream. Also good with ice cream.
