* Exported from MasterCook * Mango Habanera Sauce Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 13-01 Jan 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon vegetable oil 4 mangoes -- peeled and diced 1/4 cup chopped onion 1 dried habanera chile 1/4 cup lemon juice 1/4 cup ketchup 3 tablespoons sugar Salt and pepper -- to taste Heat oil in a small saucepan, add mangoes, onions and habanera chile. Cook until onions are soft and translucent. Add lemon juice, ketchup and sugar, stirring till mixture comes to a boil. Reduce heat and simmer for 30 minutes. Remove from heat, let cool. Blend in blender till smooth consistency. Season with salt and pepper. I think you could substitute peaches for the mangoes in this recipe. Contributed to the FareShare Gazette by Art in response to a request; 25 January 2010. www.fareshare.net - - - - - - - - - - - - - - - - - - - Back to Recipe List * Exported from MasterCook * Mexican Meat Balls with Tomatillo Sauce Recipe By : Doug Serving Size : Preparation Time :0:00 Categories : Volume 13-01 Jan 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- **Meatballs** 3/4 pound ground veal 3/4 pound ground pork mixed with bread -- soaked in milk 1/4 teaspoon marjoram 1/4 teaspoon thyme 1/4 teaspoon garlic powder 1/4 teaspoon Mexican oregano **Tomatillo Sauce** 6 large tomatillos 1/2 onion 6 garlic cloves Yesterday I made a tomatillo sauce and then meat balls. The meat balls were a mixture of veal and pork, 3/4 lb of each, mixed with bread soaked in milk, and then having 1/4 tsp of each of: marjoram, thyme, garlic powder, Mexican oregano all mixed into the meat and bread. Then build the meat balls. After I had them made I fried them in olive oil. Then I made my green sauce...6 HUGE tomatillos, half an onion, sliced. 6 garlic cloves peeled. I baked those in the oven at 400F for about 45 minutes then into a food processor and mushed up until I then turned it into a sauce, which I simmered the aforementioned meat balls in. Really very good, and I will certainly do that one again. Cheers, Doug in BC Contributed to the FareShare Gazette by Doug; 27 January 2010. www.fareshare.net - - - - - - - - - - - - - - - - - - - Back to Recipe List * Exported from MasterCook * Mung Bean Dal Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 13-01 Jan 2010 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup dried mung beans -- washed and sorted for other stuff! 1 green apple [I used a green Granny Smith] 14 ounces coconut milk -- (1 can) 3 tablespoons butter 1/4 cup shredded coconut 2 tablespoons minced garlic 2 tablespoons minced fresh ginger Salt and freshly ground black pepper 1/3 cup minced scallions -- (green onions) 1/2 teaspoon ground chile powder -- (or more) A good squirt of lime juice Peel, core and chop green apple; combine mung beans, apple and coconut milk, add half a can of water and place all in a heavy bottom pot. Bring to boil, then to simmer and let this go until the mung beans are getting soft. Check often for enough liquid! Add more water if needed. Place ginger, garlic and shredded coconut along with the butter in a smaller sauté pan and cook until it turns golden. Take care not to burn this, so not too hot under the pan. Add salt and freshly ground black pepper to this, then the chile powder and the lime juice. Dump this into the pot with the mung beans, apple etc; add green onions and mix well into the beans.
