Tangy Lemon Bars

*Crust*
2 cups all-purpose flour
3/4 cup sugar
3/4 cup Land O Lakes butter -- softened
*Filling*
2 cups sugar
1/4 cup lemon juice
4 eggs
2 teaspoons freshly grated lemon zest
1/8 teaspoon salt
1/4 cup all-purpose flour
1 teaspoon baking powder
*Glaze*
1 cup powdered sugar
1 tablespoon Land O Lakes butter -- softened
1/2 teaspoon vanilla
1 1/2 tablespoons lemon juice -- (1 1/2 to 2)

Preheat oven to 350F (180C).

Combine all the crust ingredients in a large bowl. Beat at medium speed,
scraping bowl often, until mixture resembles fine crumbs. Press the mixture
onto the bottom of an ungreased 13- x 9-inch baking pan and bake for 18 to
22 minutes or until the edges are very lightly browned.

While the crust is baking combine all the filling ingredients EXCEPT the
flour and baking powder in the same bowl. Beat at medium speed until well
mixed then reduce the speed to low; add 1/4 cup of flour and the baking
powder. Beat until well mixed.

Pour the filling over the hot, partially baked crust. Return to the oven
and continue baking for 23 to 25 minutes or until the top is golden brown.
Cool completely.

Combine all the glaze ingredients EXCEPT the lemon juice in a small bowl.
Beat at low speed, gradually adding enough lemon juice and scraping the
bowl often, for the desired glazing consistency. Drizzle over the cooled
bars.

Cut into bars.

Makes 36 bars.
