Thai Mushroom Soup

Amount Measure Ingredient -- Preparation Method

2 cups brown or white mushrooms -- sliced
1 knob of fresh ginger -- grated
1 medium onion -- sliced thin
2 garlic cloves -- minced
1 fresh lime -- zest and juice
1 tablespoon fish sauce
1 can coconut milk
2 teaspoons red curry paste
1 liters chicken broth -- (1 to 2)
[1 to 2 U.S. quarts]
Freshly chopped cilantro
Fresh Thai chili pepper -- sliced thin
Peanut oil

Place mushrooms, onion, garlic and ginger in a little oil in a stock pot;
simmer until onion transparent. Add the broth, fish sauce and lime and
bring to simmer. Cook for about 5 minutes, add coconut milk, bring back to
simmer. Five minutes prior to serving, add the curry paste and chopped
cilantro. Place chili pepper in bowls and add the soup just before serving.

Tomato Pudding

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
10 ounces tomato puree -- (1 can)
3/4 cup brown sugar
1/4 teaspoon salt
1/8 teaspoon basil
1/8 teaspoon oregano
1 cup fresh white bread cubes -- cut
into 1-inch cubes
1/3 cup melted butter

Combine sugar, salt and spices with tomato puree. Simmer for 5 minutes.

Butter a medium casserole dish and place bread cubes in it. Add tomato
puree. Pour the melted butter over the tomatoes and bread cubes. Bake
uncovered for 45 to 50 minutes in 350F oven.

Serves 6.
