Herb-Glazed Salmon

Amount Measure Ingredient -- Preparation Method

1/2 cup apricot preserves
3 tablespoons fresh basil
2 tablespoons butter
4 skin-on salmon fillets
[4 to 5 ounces each]

Preheat grill to Medium-High (350 F.)

For glaze, in a microwave-safe bowl combine apricot preserves, basil and
butter. Microwave just until butter melts; mix well. Spread glaze on flesh
side of salmon. Season with salt and pepper.

Grill salmon, flesh side down, 3 minutes or until fish begins to turn
opaque. Brush skin side with glaze, turn and grill 3 minutes more or until
fish flakes easily with a fork.

Serves 4.

Bobbie's Note: This was delicious and a bit different. I did this in a
grill pan and only made half of the recipe.
