Apple Cottage Cheese Pie

1 unbaked 9-inch pie shell -- chilled
3 medium tart apples
2 tablespoons water -- (30 mL)
1 dash salt
1 cup sugar -- (250 mL)
or Splenda or a mixture of the two
1/2 teaspoon cinnamon -- (2 mL)
1/4 teaspoon nutmeg -- (1 mL)
2 eggs
1/4 teaspoon salt -- (1 mL)
1/2 cup light cream -- (125 mL)
3/4 cup milk -- (175 mL)
1 cup creamed cottage cheese -- (250 mL) sieved
1 teaspoon vanilla extract -- (5 mL)

Pare, core and slice the apples very thin; you should have about 2 cups
(500 mL). Cook the apples with the water and a dash of salt in a covered
saucepan until they are tender. At this point the apples should be quite
dry but still hold their shape. Remove from the heat; stir in 1/2 cup (125
mL) of the sugar, the cinnamon and the nutmeg. Set aside.

Beat the eggs and 1/4 teaspoon (1 mL) salt slightly.

Heat the cream and milk together until a film shines over the surface.
Slowly pour into the eggs, beating vigorously. Add the sieved cottage
cheese, the remaining sugar and the vanilla.

Spoon the cooked apple slices into the unbaked pastry shell and pour the
cottage cheese mixture over the top.

Bake for 15 minutes at 450F (230C); reduce the heat to 325F (160C) and bake
30 minutes longer or until a knife inserted in the center comes out dry.

Serve at room temperature.

Makes 1 9-inch pie.
