* Exported from MasterCook * Old Fashioned Oatmeal Cookies Recipe By : Serving Size : 36 Preparation Time :0:00 Categories : Volume 12-10 Sep 2009 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons oil 2 eggs 3/4 cup sugar 1/2 cup nonfat dry milk powder 1/2 cup water 3/4 cup unsweetened applesauce 1 1/4 cups whole wheat flour 1/3 cup bean flour 1/4 teaspoon baking soda 1/2 teaspoon baking powder 1 teaspoon cinnamon 1/4 teaspoon nutmeg 1/8 teaspoon salt 2 1/2 cups rolled oats Preheat over to 350F. Beat shortening, sugar and eggs until smooth. Add powdered milk, applesauce and water and mix thoroughly. In a small bowl, sift together flours, soda, baking powder, spices and salt. Add dry flour mixture to liquids and mix until blended and smooth. Stir in oats until thoroughly moistened. Drop dough by 1/8-cup portions onto lightly greased cookie sheets - about 2 1/2-inch centers. Bake 20-22 minutes until lightly browned. Cool on a wire rack. A nutritious soft type oatmeal cookie as an alternative to the sugar and shortening 'crispies' that are generally made. You can substitute other spices for the cinnamon and nutmeg. One of my favorites is allspice and cardamom.
