Kripalu White Miso-Ginger Soup

7 cups vegetable stock -- or water
1 cup sliced onions
1 cup peeled butternut squash
1/2 cup sliced carrots
1/2 tablespoon ginger juice
[one 2-inch length fresh gingerroot, peeled]
2 tablespoons white miso
3/4 cup small broccoli florets

In a large pot, combine the stock, onions, squash and carrots; bring to a
boil. Reduce the heat to medium and cook for about 10 minutes.

Meanwhile, prepare the ginger juice by grating and squeezing the
gingerroot. Dilute the miso in 1/4 cup of the soup broth. Add the ginger
juice, broccoli and diluted miso to the pot; cook on low heat for 5
minutes. Serve immediately.

Serves 6.
