Tuna Florentine

Amount Measure Ingredient -- Preparation Method

3/4 cup mayonnaise
1/4 cup milk
1 teaspoon prepared mustard
1 can tuna -- (6 1/2 ounces)
1 cup boiling water
1/2 teaspoon lemon rind
1/2 teaspoon salt
1 cup Minute rice
10 ounces frozen spinach -- drained and squeezed
[1 package]

In greased casserole, add water, rice, lemon and salt.
Mix mayo, milk, mustard into spinach. Put on top of rice mixture.
Top with tuna. Bake, covered, for 20 minutes at 400F.

Notes
Betsy uses a tablespoon of mustard.
