Sicilian Sardine Antipasto

1 tablespoon balsamic vinegar
2 teaspoons extra virgin olive oil
1 pinch salt
1 cup very thinly sliced fresh fennel -- plus
some finely chopped fennel greens for garnish
1/2 cup very thinly sliced bell pepper -- red or yellow
1/2 cup very thinly sliced red onion
1 can water packed sardines -- (4.375 ounces)
drained and patted dry
Freshly ground black pepper

In a bowl, combine the vinegar, oil and salt. Whisk to blend. Add the
fennel, bell pepper, onion and sardines. Toss gently. Season to taste with
black pepper. Serve garnished with fennel greens.

Makes 4 servings.

The addition of naturally sweetened raisins in a non-dessert dish is
typical of Sicilian cooking. Use either dark or golden raisins.

Snowbank Pie

1 pie shell -- baked
Fresh fruit in season
Vanilla ice cream
4 egg whites
1 tablespoon honey

Preheat oven to 450F.

Line a ready-baked pie shell with fresh fruit that is in season (strawberries, 
raspberries or sliced fresh peaches). Cover with vanilla ice cream, piling it 
thickly but being careful not to let it reach quite to the crust.

Whip the whites of four eggs until they stand in peaks, adding 1 tablespoon 
of honey as you beat. This makes a fluffy meringue which should be spread all 
over the top.

Then place the pie in the oven, with the temperature set at 450F, until the 
meringue is a delicate golden brown.

The ice cream does not melt but of course it should be served immediately to 
appreciate the contrast of the warm meringue and the ice cream.

Yields 1 pie.

Soup Garnishes

Cut a banana in 1/8-inch slices and cook in melted butter until soft. Serve
three or four slices in chicken soup.

A combination of crumbled bacon and onions browned in bacon fat makes a
zestful garnish for tomato soup.

Spread potato chips with butter or anchovy paste then sprinkle with chopped
parsley. Add to soup at the last minute before serving. These are fine with
asparagus, tomato, pea or celery soup.

Sauté shredded almonds in butter; add Rice Krispies and sprinkle with
paprika. Add to soup just before serving. This garnish is extra good with
tomato, celery or chicken soup.

Cut salami slices in thin strips about 1/8-inch wide. Simmer these in the
soup while it is heating. Delicious for pea, bean-with-bacon, tomato,
celery or asparagus soup.

For clear consommé try this: chop an avocado in small pieces then beat with
an egg beater until it is about the consistency of whipped cream. Serve one
spoonful in each cup of the consommé.

Thin 1/8-inch slices of frankfurter browned in butter are good in creamed
soups.
