* Exported from MasterCook * Quick Curry Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Volume 12-04 Apr 2009 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 medium apple -- peeled, cored, diced 1 medium onion -- chopped 2 teaspoons cooking oil 1 tablespoon curry powder Salt, pepper and cayenne -- to taste 1/2 cup chicken broth or water 1/2 cup plain lowfat yogurt 2 cups cooked chicken -- sliced or cubed [or turkey, lamb or veal] Hot cooked rice for 4 Cook apple and onion in 2 teaspoon oil on High in 1-quart casserole, covered for 4 minutes. Stir in curry powder. Cover and cook for 4 minutes. Add salt, cayenne and pepper to taste. Add chicken broth or water. Cover and cook for 3 minutes on High. Stir in yogurt.
