Ham Fried Rice

2 eggs -- beaten
2 tablespoons cooking oil
1 cup fully cooked ham -- finely chopped
2 ounces canned chopped mushrooms -- drained
3 tablespoons green onion -- sliced
1 tablespoon soy sauce
1 garlic clove -- minced
1/8 teaspoon ground ginger
1 1/2 cups cold cooked rice -- *

In 10-inch skillet cook eggs in 1 tablespoon of the oil, without stirring,
till set. Invert skillet over a baking sheet to remove cooked eggs; cut
eggs into short narrow strips. In same skillet cook chopped ham, mushrooms,
green onion, soy sauce, garlic, and ginger in the remaining oil over high
heat for 3 to 4 minutes. Stir in cold cooked rice and egg strips; heat
through. Pass additional soy sauce, if desired.

Makes 2 servings.

Notes. * Chill rice before preparing this dish. Using hot cooked rice
causes the mixture to stick.

This was one of the best fried rice recipes I have tried. Very good flavor
and texture.

Hot Dog Soup

2 onions -- diced small
1 garlic clove -- chopped
16 ounces tomato sauce -- (1 can)
4 large potatoes -- diced
1 package hot dogs -- sliced
1 can peas
or one box frozen
Enough oil for sautéing

Sauté onions and garlic. Add sliced hot dogs. When golden in color, add
can of tomato sauce and potatoes. Add enough water to cover potatoes and
let cook. Add peas and cook to a boil. Serve.

Jennie's comments:
"I absolutely love the nostalgic trip your request for budget recipes has
put me on. I was born during the depression years (the great one) and we
had very little money growing up. One could write stories after stories
about the things our mother did with food to make it stretch to feed six
people. First of all, our mother did not like to cook and had no
imagination with food which counts for the fact that my sisters and I are
all fairly good cooks. I started at age 7, being the oldest and baked my
very first cake in the oven of a wood stove. It only burned a bit on one
side. We never really knew we were poor, we actually had so much that
didn't cost a lot. My sister's favorite comfort food is potato soup, not
thickened, merely potatoes and milk cooked and ladled over a slice of
bread. I absolutely must have chick peas and ditalini macaroni (A small 
Italian tubular pasta that is cut so the diameter is roughly the 
same as the width. )when things are not going well with me. 
Another favorite was hot dog soup. One of several 
ways my mother could make a package of 8 hot dogs go for two meals
in our house. The other meal was sliced potatoes fried with the sliced hot
dogs and topped off with eggs. There really aren't recipes for these
things. I looked online to find one that was close to the soup our mother
made. Our mother didn't like onions or garlic or tomatoes for that matter
but she made and ate this soup. I don't think she added the onions and
garlic. In later years we have made it and added some herbs along with the
onions and garlic. Sometimes green beans were added instead of the peas.
The tomato sauce was generally a large can of tomatoes that had been grown
and canned."
