* Exported from MasterCook * Irish Soda Bread Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 12-03 Mar 2009 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 cups white unbleached flour [use all purpose if you must] 2 cups whole wheat flour 1/4 cup oat bran 1/4 cup brown sugar, packed 1 tablespoon baking powder 1 teaspoon baking soda 1 teaspoon salt 1/4 cup butter or hard margarine -- cubed 1 3/4 cups buttermilk at room temp 1 egg -- beaten into the buttermilk In a large bowl, combine all dry ingredients. Using a pastry blender, cut in the butter until mixture resembles coarse crumbs. Mix in egg and buttermilk all at once to flour mixture, stirring with a fork to make a soft dough. Turn our and knead gently, 10 times. Shape into one round loaf and place on a greased baking sheet. Cut a large cross across center of dough and place in 375F oven for 50 - 55 minutes until it sounds hollow when tapped. Remove from oven and let cool before slicing. Enjoy! This came from my mother who although she was born in Toronto in 1888, went back to Belfast with her family the next year. She returned to Canada in 1906-7 and met my father who had been born in Ireland in 1886, on that trip. They had 3 children, of whom I was the last afterthought, born in 1926. Enjoy the soda bread!
