* Exported from MasterCook * Banana Cake Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 12-03 Mar 2009 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 1/2 cups sugar 1 cup shortening or butter 4 eggs 1 cup sour cream 2 teaspoons baking soda 3 cups all-purpose flour 1 tablespoon vanilla extract 6 ripe bananas -- mashed (2 1/2 cups) Preheat the oven to 350F. Grease and flour three 9-inch cake pans; set aside. Cream together the sugar and shortening or butter. It will be dry and crumbly. Add the eggs an beat well. Mix in the sour cream. In a separate bowl, sift together the flour and baking soda. Add to the creamed mixture and beat well. Add the mashed bananas and vanilla; mix well. Divide evenly between the cake pans. Bake for 30-35 minutes. Note - you can frost this with either white or chocolate frosting. Both go well with the bananas. Drain, reserving the liquid. Place in buttered casserole, alternately with corned beef and egg slices. Mix evaporated milk and reserved potato liquid. Mix melted butter and flour and cook over low heat for three minutes. Gradually stir in milk/potato liquid. Remove from heat and stir in Cheddar cheese, stirring until melted. Pour cheese mixture over potato mixture. Cover with buttered bread crumbs and bake in 350F oven until bubbling and browned, about 45 minutes.
