Almond Frosting

1 cup margarine -- Blue Bonnett
12 tablespoons shortening -- Crisco
2 cups granulated sugar
1 cup milk -- warmed
[place in microwave for 20 seconds]
4 teaspoons almond extract
[or vanilla or your choice]
2 tablespoons cornstarch

Warm milk slightly, about 30 seconds in a microwave. Add to other
ingredients and beat for 20 minutes (or 8 if using a Kitchen Aid). Frost
cake.

Anise Hard Candy

1 1/2 teaspoons butter -- softened (NO SUBSTITUTES)
3/4 cup water
2/3 cup light corn syrup
2 cups granulated sugar
1 teaspoon anise extract
Red food coloring
2 tablespoons confectionery sugar -- (2 to 3)

Butter an 8-inch square baking pan with 1 1/2 teaspoons butter; set aside.

In a large heavy saucepan, combine water, corn syrup and sugar. Bring to a
boil over medium-high heat, stirring occasionally. Cover and cook for 3
minutes to dissolve any sugar crystals. Uncover; cook over medium-high
heat, without stirring, until a candy thermometer reads 300 degrees F (hard
crack stage).

Remove from heat; stir in anise extract and food coloring (keep face away
from mixture as odor is very strong). Pour into prepared pan. Using a sharp
knife, score into 3/4-inch squares. Cool.

Separate into squares, using a sharp knife, if necessary. Place
confectionery sugar in a baking pan; add candy and roll until coated.
Brush off excess sugar with a pastry brush. Store at room temperature in an
airtight container.

Yields about 8 dozen.

Anise-Flavored Lollipops

1 cup granulated sugar
1/2 cup light corn syrup
1/3 cup water
1/4 teaspoon anise extract
1/4 teaspoon black paste food coloring
Lollipop candy molds
Lollipop sticks

1. Prepare the candy molds by spraying them with nonstick cooking spray,
and inserting the candy sticks into the molds.

2. Combine the sugar, corn syrup and water in a medium saucepan over medium
heat. Stir constantly until sugar dissolves.

3. Cook candy to hard-crack stage, 300F, stirring frequently to avoid
scorching.

4. Once proper temperature is reached, remove from the heat and stir in the
coloring and flavoring.

5. Immediately pour the candy into the molds. If the candy hardens before
all of the lollipops have been made, re-warm it briefly over low heat until
it softens enough to be workable.

6. Allow to set at room temperature. Wrap candies individually and store in
a cool, dry environment.

Alternate Method: If you don't have lollipop molds, you can arrange candy
sticks on a heatproof surface (like a marble slab or an oiled cookie sheet)
and pour dollops of hot candy over the sticks. This method is less precise,
but it is fairly effective.

Avocado Ice Cream, Easy Recipe

3 large avocados -- nice and ripe
1 can sweetened condensed milk

Split the avocados, remove and discard the seed, and scoop the meat into
a bowl. Puree the avocado or mash until fairly smooth.

Stir the milk into the avocado and stir or whip until nice and smooth.
Place in shallow plastic containers with lids; seal and place in the
freezer for about 4 or 5 hours.

This is quite rich, so very small servings are appropriate.
