Baked Dried Beef Appetizer

8 ounces cream cheese
1/2 cup sour cream
2 tablespoons diced onion
2 tablespoons milk
2 tablespoons finely diced green pepper
3 ounces dried beef
1/4 pound Gruyere cheese -- shredded

Mix all ingredients together, place in oven proof greased bowl. Bake in
350F oven for 30 to 40 minutes or until heated through and cheese is
melted and bubbling.

Bloody Mary Soup

Amount Measure Ingredient -- Preparation Method

1 medium onion -- diced
3 celery ribs -- diced
2 tablespoons butter
2 tablespoons tomato puree
1 tablespoon sugar
5 cups tomato juice
1 tablespoon salt
2 teaspoons Worcestershire sauce
1/4 teaspoon pepper
1 tablespoon lemon juice
4 ounces vodka

Sauté onions and celery in butter until light brown. Add tomato puree and
sugar. Sauté 1 minute. Add tomato juice. Simmer 8 minutes. Add remaining
ingredients. Strain.

Serve either hot or well chilled.

Serves 6.

Blueberry White Chip Muffins

MUFFINS
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup packed brown sugar
2 1/2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup milk
1 large egg -- lightly beaten
1/4 cup butter or margarine -- melted
1/2 teaspoon grated lemon peel
2 cups NESTLE® TOLL HOUSE® Premier White Morsels
[divided]
1 1/2 cups fresh or frozen blueberries
STREUSEL TOPPING
1/3 cup granulated sugar
1/4 cup all-purpose flour
1/4 cup ground cinnamon
3 tablespoons butter or margarine

For Muffins:

Preheat oven to 375F. Paper line 18 muffin cups.

Combine flour, granulated and brown sugars, baking powder and salt in large
bowl. Stir in milk, egg, butter and lemon peel. Stir in 1 1/2 cups morsels
and blueberries. Spoon into prepared muffin cups, filling almost full.
Sprinkle with Streusel Topping.

Bake for 22-25 minutes or until wooden pick inserted in centers comes out
clean. Cool in pans 5 minutes; remove to wire racks to cool slightly.

For Streusel Topping: Combine sugar, flour and cinnamon in small bowl. Cut
in butter or margarine with pastry blender or two knives until mixture
resembles coarse crumbs.

Melt remaining White Morsels in the microwave and drizzle over muffins.

Makes 18 muffins.

Bobbie's Note. I made half of this recipe, using 1/4 cup Egg Beaters for
the 1/2 egg required. They were very good but quite sweet and more a
dessert of sweet bread than most muffins.
