Yeast Coffee Cake (Jennie)

1 cup scalded milk
3/4 teaspoon salt
2/3 cup sugar
4 tablespoons shortening
1 cake yeast -- dissolved in
1/4 cup warm water
1 egg
2 cups flour -- about
Sugar
Cinnamon

Cool the milk and add the yeast and one-half the flour. Beat well and 
let rise until very light. Add the slightly beaten egg, sugar and 
melted fat; mix thoroughly and add remaining flour.

Let rise until almost double in bulk.

Pour into shallow, greased pans. When light, sprinkle thickly with 
sugar and cinnamon.
Bake twenty minutes at 400 degrees F.

Serve hot.

1 package dry yeast
3/4 cup warm water
1/4 cup sugar
1 teaspoon salt
2 1/4 cups all-purpose flour
1 egg -- beaten
1/4 pound butter -- softened (1 stick)
-----STREUSEL-----
2 tablespoons butter -- softened
1/2 cup packed brown sugar
2 tablespoons flour
2 teaspoons cinnamon
1/2 cup chopped nuts

Dissolve the yeast in the warm water. Add sugar, salt and 1 1/4 cups of the 
flour. Beat 2 minutes. Mix in the egg and softened butter. Gradually add and 
beat in the remaining cup of flour.

Drop batter by small spoonfuls into a greased 9x12x2-inch baking pan.

Mix the butter, sugar, flour and cinnamon streusel ingredients until crumbly. 
Stir-in the nuts. Sprinkle over cake mix. Let rise 1 hour in a warm draft-
free location.

Bake 375 degrees F. 30 to 35 minutes.
