* Exported from MasterCook * Deathly Sweet Chocolate and Caramel Cake Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Volume 12-01 Jan 2009 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 German chocolate cake mix 2 cups caramels -- softened 1 cup sweetened condensed milk 1 stick butter or margarine -- (1/4 pound) 1 cup chocolate chips 1 cup pecans -- coarsely chopped Grease and flour a 9x13-inch glass dish. Prepare the cake mix according to directions. Pour half the batter (2 1/2 cups) into the dish and bake at 325F for 30 minutes. Melt the caramels, milk and butter/margarine in the microwave on high, about 7 minutes. Pour the melted mixture over the baked portion of cake. Sprinkle the chocolate chips and pecans evenly. Pour the remaining uncooked batter on top and bake at 325F for 50 minutes. Let cool before cutting. Have EMTs standing by. Back to Recipe List * Exported from MasterCook * Deep Fried Fruit Won Ton Cookies Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 12-01 Jan 2009 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups prunes -- chopped 1 1/2 cups coconut flakes 1 cup dried apricots -- chopped 1 cup almonds -- chopped 1 1/2 cups brown sugar, packed 24 Won ton wrappers Vegetable oil Mix prunes, apricots, brown sugar, coconut and almonds. Put about 2 teaspoons of this mixture on center of each won ton wrapper. Moisten edges with water. Fold each wrapper in half to form a triangle, pressing edges firmly to seal. Heat about 1-2 inches of oil in a skillet. Fry filled won tons one at a time turning occasionally till golden brown. Drain on paper towels. Good served with ice cream. Contributed to the FareShare Gazette by Jim K in response to a request; 9 January 2009. www.fareshare.net - - - - - - - - - - - - - - - - - - - Back to Recipe List * Exported from MasterCook * Deep-fried Wontons with Date Filling (Tsao-ni-hun-tun) Recipe By : Chinese Cooking; Time-Life Foods of the World Serving Size : 60 Preparation Time :0:00 Categories : Volume 12-01 Jan 2009 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound wonton wrappers or ready-made egg-roll wrappers that have been cut into squares **Filling** 8 ounces pitted dates 1/2 cup finely chopped walnuts 2 teaspoons grated fresh orange rind 1 tablespoon orange juice -- (1 to 2) or cold water (if needed) 3 cups peanut oil or flavorless vegetable oil Confectioners' sugar The following should be done ahead of time. **Filling** With a cleaver or sharp knife, chop the pitted dates fine, adding a teaspoon or so of orange juice or water if they are too sticky to cut. Combine the dates, walnuts and grated rind in a small bowl. Knead the mixture with your fingers until it can be gathered into a ball. If the mixture is dry, moisten it with orange juice or water. Roll a tablespoon of filling between the palms of your hands to form cylinders 1 inch long and about 1/3-inch in diameter. Assemble the wontons Place a cylinder of filling diagonally across each wrapper, just below the center. With a finger dipped in water, moisten the lower point of the wrapper. Fold the point over the filling and tuck it underneath. Roll up the resulting tube until all the dough surrounds the filling. Stick a finger into each end of the tube and give it a twist to seal the ends. Once the assembly is complete you can carry on to the cooking. Pour the oil into a 12-inch wok or deep-fryer and heat until a haze forms above the oil or it reaches 375F on a deep-frying thermometer. Deep-fry the wontons, 8 or 10 at a time, turning them occasionally, for 2 to 3 minutes or until they are golden brown and crisp. As they are finished cooking, transfer them to paper towels to drain and cool. Just before serving, sprinkle the wontons with confectioners' sugar.
