* Exported from MasterCook * Amaretto Cake Recipe By : Serving Size : 16 Preparation Time :0:00 Categories : Volume 12-01 Jan 2009 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 package yellow cake mix -- (18.25 ounces) 4 eggs 1 package instant vanilla pudding mix -- (5.1 ounces) 2 tablespoons amaretto liqueur 1/2 cup water 1/2 cup vegetable oil 1/4 teaspoon almond extract **Amaretto Glaze** 1/2 cup amaretto liqueur 1 cup sifted confectioners' sugar 1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch Bundt pan. 2. In a large bowl, combine cake mix, eggs, instant vanilla pudding, water, oil, almond extract and 2 tablespoons of the amaretto; blend together well. Pour batter into the prepared pan. 3. Bake in preheated oven for 40 to 45 minutes or until a toothpick inserted into the center of cake comes out clean. Remove cake from oven and while it is still warm, poke holes in the surface (I use an ice pick). Drizzle with the Amaretto Glaze, insuring that some of the glaze fills the holes. Let the cake cool for at least 2 hours before removing from the pan. 4. To make Amaretto Glaze: Sift the confectioners' sugar and combine it with the remaining 1/2 cup amaretto. Blend until smooth. You may add more amaretto as needed. Gonzo's Comments: This is one of my favorite recipes. It really has a nice and unique flavor. And it's easier than making a batch of frosting. I had problems with it sticking in the fluted fancy dancy pans and they are a bear to wash. So I went out to a restaurant supply and purchased a simple straight edged Bundt pan. Works better, looks almost as good and washes a lot easier. (I make this often, it is requested when I go out for a party.) Also I live in Mexico and we don't have pudding mixes down here. So I just leave it out and the cake comes out great. I use Duncan Hines and I think it has pudding in the mix. It's very moist anyway after you pour 1/2 cup of Amaretto over it. And you don't need to use the expensive stuff. Amaretto is nothing but vodka with almond flavoring. If you plan on making a few cakes buy an off brand label and save some money. ---> While Gonzo's oven temperature conversion of 350F to 175C is basically correct a generally used quick conversion is 350F/180C (or Gas 4); a moderate oven in other words. Back to Recipe List * Exported from MasterCook * Apple Cobbler Cake Recipe By : Serving Size : 15 Preparation Time :0:00 Categories : Volume 12-01 Jan 2009 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 42 ounces apple pie filling -- (2 cans) 1 package Butter or Yellow Cake Mix -- (18.25 ounces) 3/4 cup butter or margarine -- softened 2/3 cup chopped walnuts 1/2 teaspoon cinnamon 1/2 cup milk Vanilla ice cream -- optional but good Heat oven to 375 F. In large saucepan, heat pie filling over medium heat until very hot, stirring occasionally. Meanwhile, in large bowl, combine cake mix and butter; blend at low speed for 45 to 60 seconds or until crumbly. Place 1 1/2 cups cake mixture in medium bowl; stir in walnuts and cinnamon until well mixed. Add milk to cake mixture in large bowl; stir until dry particles are moistened. Spoon hot pie filling into ungreased 13x9-inch pan.* Top with heaping spoonfuls of cake batter. Sprinkle with walnut mixture. Bake at 375 F. for 30 to 40 minutes or until topping is golden brown and cracks appear dry. Cool 30 minutes. Serve warm with ice cream. * Tip. Cake can be baked in two 8-inch square pans. Preheat oven to 350 F. In a large bowl, whisk together oil, brown sugar, citrus zest and egg. Do not over beat. Mixture should be pasty. Add vanilla and buttermilk. In a separate bowl, stir together flour, soda and cinnamon. Blend gently. Once partially blended, fold in fruit. If batter seems too loose, add a few tablespoons of flour (no more than 4) to make batter a bit stiffer. Scoop batter into oiled 9 x 13-inch pan. Sprinkle topping evenly over batter. Bake for 45 minutes or until a toothpick inserted into the cake comes out clean. Back to Recipe List * Exported from MasterCook * Avocado Mousse Recipe By : Woodward's Serving Size : Preparation Time :0:00 Categories : Volume 12-01 Jan 2009 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon unsweetened gelatin powder -- (15 mL) 3 tablespoons cold water -- (45 mL) 1/4 cup boiling water -- (60 mL) 3 tablespoons lemon juice -- (45 mL) 1/2 cup mayonnaise -- (125 mL) 1 cup mashed sieved avocado -- (250 mL) 1 cup heavy cream -- (250 mL) [whipped until stiff] 1/2 teaspoon Worcestershire sauce -- (2 mL) 1 teaspoon onion juice -- (5 mL) Salt and pepper 1 dash cayenne Soften the gelatin in the cold water then dissolve it in the boiling water; add the lemon juice and set aside to cool. Blend in the mayonnaise and mashed sieved avocado. Fold in the heavy cream that has been whipped until stiff. Season with Worcestershire sauce, onion juice, salt, pepper and cayenne. Pour into an oiled ring mold and chill until firm. Serve with French dressing.
