* Exported from MasterCook * Orange Beef and Broccoli Stir-fry Recipe By : 1 Week, 5 Easy Meals Serving Size : 4 Preparation Time :0:00 Categories : Volume 11-12 Dec 2008 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup low-sodium beef broth -- or water 1 tablespoon soy sauce 1 tablespoon lemon juice 2 teaspoons cornstarch 1 tablespoon vegetable oil 1 pound top round London broil -- cut into strips 10 ounces frozen broccoli spears -- thawed and patted dry 1 tablespoon grated orange peel 1/4 cup orange juice Salt and pepper Whisk together broth, soy sauce, lemon juice and cornstarch in a bowl; set aside. Warm oil in a wok or large skillet over Medium-High heat until hot. Add beef, turn heat to High and cook, stirring constantly, until no longer pink 2 to 3 minutes. Add broccoli and cook, stirring, until warmed through, about 2 minutes. Stir in reserved sauce, orange zest and juice. Cook, stirring constantly until sauce is thickened, about 2 minutes. Kitchen Tips: Be Fresh: Replace the frozen broccoli with fresh, cook it in boiling salted water for 2 minutes first. Get Creative: Toss in chopped fresh ginger, sliced scallions, strips of red and yellow bell pepper or slivered snow peas before serving to dress up the dish. Intensify the Flavor: If time permits, marinate the beef overnight in a mixture of orange zest, chopped fresh thyme, a crushed clove of garlic and olive oil. Pat the meat dry before starting to cook the stir-fry. Choose A Side: Serve the stir-fry over brown or white rice or, try buckwheat noodles for a different flavor and texture.
