Tofu and Bok Choy Doug

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1/4 cup chicken stock
4 tablespoons Hoisin sauce
450 grams firm tofu -- (1 1-pound block)
pressed under a weight for an hour or two
3 good shots of fish sauce

Quarter baby bok choy and soak in cold water. After the tofu is reasonably
dry, cut into four slices then into triangles. Brown in hot pan and keep
warm.

In same pan, simmer the bok choy for about 3 minutes, move to side; add
browned tofu, then the Hoisin mixed with the chicken stock; get this
simmering and add the fish sauce.

When hot again, serve with cooked noodles.

1 package refrigerated tortellini -- or ravioli
Pesto -- to taste
Chopped spinach
Optional sautéed onions, mushrooms
and/or bell peppers
Grated Parmesan

Cook a package of refrigerated tortellini or ravioli. Drain then stir in
pesto to taste and some chopped spinach.

If available add some sautéed onions, mushrooms and/or bell peppers.
Grate Parmesan over the top.

Makes enough for 2 or 3.
