* Exported from MasterCook * Ole (an old Fiji recipe) Recipe By : Pacific Islands Cookbook by Susan Parkinson and Peggy Stacy Serving Size : Preparation Time :0:00 Categories : Volume 11-06 Jun 2008 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons sugar 6 cups water 2 cups sugar 1 tablespoon citric acid 2 small green chilies -- (2 to 3) 2 teaspoons cloves 1 cinnamon stick -- (3 inches/6 cm) In a pot, caramelize the 2 tablespoons of sugar then add the water, the 2 cups of sugar, citric acid, chilies, cloves and the cinnamon stick. Boil for 1 hour; strain and pour into hot sterile bottles and seal. Makes 7 1/2 cups or 1.62 liters. Authors' notes. This cordial has a refreshing and slightly hot flavour. The chilies could be left out or replaced with a little green ginger. Hallie's note. The recipe doesn't mention if this is to be used as a base and served with the addition of water or sparkling water so I guess a person will just have to experiment. From Pacific Islands Cookbook by Susan Parkinson and Peggy Stacy; 1977; Pacific Publications, Australia. MC format by Hallie. Untried.
