* Exported from MasterCook * Keeping Basil Recipe By : Serving Size : Preparation Time:0:00 Categories : FareShare Gazette April 2008 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- (See Below) This isn't a recipe but it's a hint for keeping basil. Several years ago I had a great basil crop (rare in the Pacific NW). I picked and made pesto till it came out of my ears. Then I decided to freeze it in zip lock and vacuum sealed bags. That pesto kept for several years and every time I wanted some, I would break off a piece and toss it into my pasta sauce or soup or pizza topping. Whenever I get a good buy on basil or my CSA has a good crop, I still do this. First invest in a couple ice trays for the small cubes or half rounds. Instead of making a complete pesto, just put basil into processor or blender and chop with a little olive oil until a thick paste is formed. Fill the ice trays and freeze. Remove and quickly empty into small heavy freezer bags. One or two can be retrieved and either tossed into sauce or what ever. I think I got this idea from some site on the internet several years ago.
