Tiramisu (Explorer Of The Seas)

4 large egg yolks
2 1/2 ounces sugar
5 ounces mascarpone cheese
3 ounces Kahlua liquor
3 ounces Amaretto
1 ounce rum
3 ounces cream -- (garnish)
2 ounces brewed espresso coffee
36 ladyfingers
1 ounce cocoa powder
Chocolate sticks for garnish

Bring water in a double boiler to a boil and shut off heat. Combine eggs 
and sugar over double boiler and whisk until pale, light and doubled in 
volume (mixture will thickly coat back of the spoon). Add half of 
Amaretto and Kahlua. Whip in room temperature mascarpone cheese until 
smooth and lump free. Combine remainder of Kahlua, Amaretto, rum and 
espresso mixture. Dip (lightly soak) ladyfingers in espresso mixture. 
Layer a serving dish or individual crystal or glass dessert glasses 
with mascarpone mixture and alternate with ladyfingers. Chill. 

Sprinkle with cocoa powder and garnish with whipped cream and 
chocolate sticks.

Yields 4 to 6 servings.

Note : for chocolate garnish, melt chocolate, pipe or drizzle onto 
parchment paper, let harden, peel off and use as a garnish.

8 ounces cream cheese
1 pound feta -- crumbled
1 cup lemon juice
1/4 teaspoon ground white pepper -- or to taste
1/2 cup olive oil
1 cup half & half
4 roasted red peppers -- diced
2 teaspoons Tabasco sauce -- (optional)

Soften cream cheese in large bowl with mixer. Add feta, lemon juice and
white pepper. Slowly add olive oil until all the oil is absorbed. Mix in
half & half until the mixture is smooth and soft. If the mixture is hard,
add a little more half & half to soften. Add Tabasco. Add roasted peppers.
Serve with pita bread, cracker or raw vegetables.

Chupa Note: once you have the base cheese spread put together (cream
cheese, feta, lemon juice, white pepper, olive oil) you can add anything
you like: mint, capers, Kalamata olives, sun dried tomatoes etc. It thins
down beautifully with warm broth, water or additional olive oil if you
don't mind the calories, into a great pasta sauce.
