Back to Recipe List * Exported from MasterCook * Avocado, Semi-Dried Tomatoes and Crisp Prosciutto Salad Recipe By : BBC Good Food Magazine Serving Size : 4 Preparation Time :0:00 Categories : Volume 11-03 Mar 2008 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 perfectly ripe vine tomatoes Olive oil 6 prosciutto slices -- (Italian cured ham) 2 ripe avocados For the dressing: 1 tablespoon lemon juice 4 tablespoons olive oil Salt and pepper Cut the tomatoes into quarters lengthways. Spread over a baking sheet and sprinkle with salt and pepper. Bake at 160 C (325 F) for 1 1/2 hours until the tomatoes are slightly dried. Snip the prosciutto into pieces and add to the tomatoes for the last 15 minutes of cooking time to crisp. Peel and stone the avocados. Arrange the tomatoes on 4 plates and spoon teaspoons of avocado on top. Scatter over the prosciutto pieces. Whisk lemon juice and olive oil for the dressing, adding some seasoning. Drizzle over the salad. Serves 4. Prep time: 10 minutes. Cooking time: 1 1/2 hours.
