* Exported from MasterCook * White Bean and Sun-Dried Tomato Pate Recipe By : Vegetarian Celebrations Serving Size : 10 Preparation Time :0:00 Categories : Volume 11-02 Feb 2008 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon olive oil 1 large onion -- chopped 2 garlic cloves -- minced 1 1/2 cups cannellini or navy beans -- well cooked 1/3 cup oil-cured sun-dried tomatoes 1/2 lemon -- juice of 1 parsley sprig 1/2 teaspoon dried thyme 1/2 teaspoon summer savory 2 tablespoons water Salt to taste -- optional Pepper to taste Heat the oil in a skillet. Add the onion and sauté over moderate heat until translucent. Add garlic and continue to sauté until onion is just beginning to brown. Combine the onion mixture with all the remaining ingredients except for the salt and pepper in the container of a food processor* and process until completely smooth. Stop and scrape down the sides as needed. Season to taste with salt and pepper. Pat into an attractive shallow crock to serve. * This can be done in a blender but do not process too long. This is nice with freshly baked French or rye bread or with crackers. Yields 10 servings. Source : Vegetarian Celebrations.
