Heat to a boil. Stir in rice. Top with your choice of cooked meat. Cover and cook over low heat 5 minutes or until done. Contributed to the FareShare Gazette by Joan; 31 January 2008. www.fareshare.net - - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Orange-Cocoa Cream Cheese Frosting Recipe By : Anne Byrn Serving Size : Preparation Time :0:10 Categories : Volume 11-01 Jan 2008 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces cream cheese -- at room temperature 4 tablespoons butter -- at room temperature [1/2 stick] 1/4 cup unsweetened cocoa powder 1 teaspoon pure orange extract 3 3/4 cups confectioners' sugar -- sifted 1 tablespoon orange liqueur -- (1 to 2 tablespoons) such as Grand Marnier, Cointreau or Triple Sec Place the cream cheese and butter in a large mixing bowl. Blend with an electric mixer on low speed until fluffy, 30 seconds. Stop the machine and add the cocoa powder, orange extract, confectioners' sugar and 1 tablespoon orange liqueur. Blend with the mixer on low speed until the sugar is well combined, 1 minute. Increase the speed to medium and beat until light and fluffy, 1 minute more. If the frosting seems too stiff, blend in another 1 tablespoon liqueur. Use to frost the top and sides of the cake or cupcakes of your choice. Makes 3 1/2 cups; enough to frost a 2- or 3-layer cake or 36 cupcakes. He had been frosting my devil's food cakes with it and he promised that the chocolate and orange combination would taste very European. Bob was right. And adding that orange liqueur helps, too! This frosting is superb on the Chocolate Orange Cake or omit the liqueur and frost the Orange Swirl Chocolate Cupcakes for the children's school parties. The Cake Mix Doctor Says: If you don't want to add alcohol to this recipe, use orange juice instead. And for a powerful flavor punch, instead of orange extract try 1/2 teaspoon orange oil. This is a highly concentrated flavor distilled from the zest of many, many oranges. It is expensive and if you can locate it at a specialty shop, enjoy it and use it sparingly.
