* Exported from MasterCook * HeartSmart Cucumber, Tomato and Chickpea Salad Recipe By : Darlene Zimmerman, MS, RD, for Heart Smart Serving Size : 8 Preparation Time :0:00 Categories : Volume 10-12 Dec 2007 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tomatoes -- cored and chopped 1 English cucumber -- chopped 15 1/2 ounces chickpeas -- (1 can) drained and rinsed 2 tablespoons red wine vinegar 1 tablespoon olive oil 1 teaspoon Dijon mustard 1/2 teaspoon salt 1/4 teaspoon ground black pepper 1 tablespoon fresh chopped basil -- or to taste In a large bowl, combine the tomatoes, cucumber and chickpeas. In a small bowl or measuring cup combine the red wine vinegar, olive oil, mustard, salt, black pepper and basil; stir with a whisk. Drizzle over tomato mixture, tossing gently to coat.
