Joan notes for any bean recipes that uses bacon/lard etc:
We don't care to use bacon/lard etc. for health reasons and find that
turkey sausage or turkey bacon is a very good substitute. We also use olive
oil, hickory liquid smoke or smoked paprika to add substantial flavor to
suit our needs in many bean recipes!

Black Olive Pesto

1 cup black olives -- pitted
1/2 cup grated Parmesan
2 tablespoons olive oil
1 teaspoon minced garlic
In a food processor puree the olives, Parmesan, olive oil and garlic until
smooth.
Can be stored in the refrigerator for several weeks in an air tight
container.

Borracho Beans

1/2 pound sliced bacon
1 onion -- chopped
2 garlic cloves -- finely chopped
1 jalapeno pepper -- (1 to 2)
seeded and finely chopped
1 pound pinto beans -- (454 g
soaked overnight and boiled until tender
24 ounces beer -- (two 12-ounce cans)
Salt and freshly ground pepper to taste
Fry the bacon until crisp. Drain on paper towels, crumble and set aside.
Reserve about 2 tablespoons (30 ml) of the bacon fat and heat it in a large
pot over moderate heat. Sauté the onion, garlic and jalapenos until tender
but not brown, about 5 minutes. Add the remaining ingredients and simmer
until heated through. Top with crumbled bacon and serve hot.
Serves 6 to 8.
