Black Bean Casserole

2 tablespoons olive oil
1 large sweet onion, finely chopped
1 large bell pepper, finely chopped
4 cloves garlic, finely chopped
2 teaspoons cumin
2 cans tomatoes, diced undrained
1 can green chilies, mild (or hot if you prefer)
4 cans black beans, drained
12 ounces Cheddar cheese, shredded
TOPPINGS:
4 green onions, chopped
1 medium tomato, sliced
1/2 cup sliced black olives
Shredded lettuce
Sour cream
In skillet bring olive oil to temperature. Combine sweet onions,
bell pepper, garlic and cumin. Saute until onion is tender
(clear). Add tomatoes and chilies. Bring to boil, reduce
temperature and simmer 10 minutes. Add black beans and remove
from heat.
Spray a 13-x-9-inch glass baking dish and layer in the following
order: 1/3 bean mixture, 1/3 shredded cheese, 1/3 bean mixture,
1/3 shredded cheese, and last 1/3 bean mixture. Reserve remaining
cheese.
Bake at 350F for 30 minutes. Remove from oven and top with
remaining cheese, green onions, black olives and sliced tomatoes.
Let sit 10 minutes to allow cheese to melt. Serve with lettuce
and sour cream if desired.
