* Exported from MasterCook * Quick Cherry Dessert Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 10-07 Jul 2007 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup butter or margarine 1 1/2 cups granulated sugar 4 eggs 1 teaspoon almond extract 2 cups all-purpose flour 2 teaspoons baking powder 21 ounces cherry pie filling -- (1 can) Powdered sugar to dust over top -- optional 1. In a large mixing bowl, cream together the butter and sugar. Add the eggs. Beat until light and fluffy. 2. Add the almond extract. Stir in the flour and baking powder. Mix until smooth. 3. Butter a 13x9-inch cake pan. Turn the mixture into the pan. 4. Spoon the pie filling into the cake, in 16 spots, spacing 4 spoonfuls evenly in each direction. 5. Bake at 350F. for 45-50 minutes or until golden and cake tests done. Filling will sink into the cake while baking. 6. To serve, cut into 16 pieces. 7. Place bottom side up on serving plate. Dust with powdered sugar. Spoon slightly sweetened whipped cream over each serving, if desired. This is great served warm! TIPS : May use blueberry filling instead of cherry filling. Source : Lisa Contributed to the FareShare Gazette by Joan; 7 July 2007. www.fareshare.net - - - - - - - - - - - - - - - - - - - * Exported from MasterCook * Quick Chicken Saute with Bacon Recipe By : Joanne Catanzarite, Baden, PA Serving Size : 2 Preparation Time :0:00 Categories : Volume 10-07 Jul 2007 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3/4 pound boneless skinless chicken breasts 1/8 teaspoon salt 2 slices bacon -- cut into 1/2" pieces (2 to 3) 1 1/2 green onions -- with tops, thinly sliced [1 1/2 to 2] 1 1/2 tablespoons white wine Salt and pepper -- to taste Hot rice -- for serving (optional) Slicing across the grain, cut chicken into 1/2-inch slices and toss with salt. Brown the bacon in a large frying pan. Remove from pan. Put chicken in the pan and sear over Medium-High heat, stirring frequently, about 7 minutes. Return the bacon to the pan and cook for 5 minutes. Add the wine and stir with a wooden spoon to deglaze the bottom of pan. Stir in the green onions and season to taste with salt and pepper. Serve over rice. Serves 2.
