* Exported from MasterCook * Venison Medallions with Dried Cranberries and Cheese Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Volume 10-05 May 2007 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup sherry 1 cup dried cranberries 12 venison chops 1/4 cup vinegar 1/2 cup blue cheese -- diced and softened 1/2 cup feta cheese -- diced and softened 1 cup flour 1/2 teaspoon granulated garlic 1/2 teaspoon salt 1/2 teaspoon black pepper 2 tablespoons butter 2 tablespoons olive oil 4 tablespoons butter -- for sauce Remove the medallions from each of the chops, as well as any other pieces of meat on the bone large enough to save. Trim the medallions of fat and sinew and rinse well. Place in a plastic bag with a little vinegar. Refrigerate for at least an hour. Soak the dried cranberries in the sherry. Set aside while completing the rest of the dish. Dice cheeses and let rest to soften on cutting board while completing the rest of the dish. Combine flour, granulated garlic, salt and black pepper. Place in a plastic bag or "batter bowl". Place venison pieces in the bag or bowl and shake to coat. Excess flour should be shaken off. Saute the chops in butter and olive oil at medium heat. Turn them once so they cook evenly on both sides; they will cook quickly, so watch them carefully. Do in batches, as necessary. When all are done remove to a large platter; deglaze the pan with sherry and cranberries. Add 4 tablespoons of butter and as it melts, add 4 tablespoons of the dredging flour. Whisk until a smooth sauce forms. Pour over venison on platter; scatter diced cheeses over the dish and serve at once.
