Mexican Turkey for Taco Salad - 5 pts

1 1/2 pounds ground turkey -- dark meat
16 ounces tomato salsa -- (1 jar), use a thick
commercial salsa like Pace Picante

Coat the slow cooker with nonstick cooking spray. To make the meat sauce,
put the ground turkey and salsa in the cooker. Cover and cook on Low until
cooked thoroughly, 4 to 6 hours. Stir the sauce.

To make the salad, slice the avocado and put all the salad components in
separate containers. On each individual plate layer some lettuce, a
handful of corn chips, some of the hot meat, a spoonful or two of hot
pinto beans, shredded cheese, some salsa, sour cream, avocado and
olives.

Salad:
1 medium firm-ripe avocado
6 cups shredded iceberg lettuce or chopped romaine
3 cups baked corn chips
One 15-ounce can pinto beans, rinsed, drained, and heated in a saucepan or
microwave
1 1/2 cups nonfat shredded cheddar cheese
One 16-ounce jar tomato sauce
2 medium ripe tomatoes, coarsely chopped
1 cup cold fatfree sour cream
One 4-ounce can sliced ripe California black olives, drained

Serves 6

calories from fat); 21g Protein; 5g Carbohydrate; 0g Dietary Fiber;
90mg Cholesterol; 742mg Sodium. Exchanges: 2 1/2 Lean Meat; 1
