* Exported from MasterCook * Roasted Garlic, Bell Pepper and Tomato Blender Sauce - 5 pts Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Volume 10-04 Apr 2007 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 5 cloves garlic, chopped 1/4 cup water 5 tablespoons olive oil, divided 6 small tomatoes 1 (16 ounce) jar roasted red bell peppers salt and pepper to taste 1 teaspoon dried red pepper flakes 1 tablespoon chopped fresh basil Preheat oven to 450 degrees F (230 degrees C). Place whole unpeeled head of garlic in an oven-safe dish with 1/4 cup water and drizzle 1 tablespoon olive oil on garlic. Roast in preheated oven for about 45 minutes. Meanwhile, put tomatoes in a blender and blend until pureed. Add bell peppers and blend until pureed. Break roasted cloves of garlic and squeeze 5 cloves into blender; blend in garlic. Add 4 tablespoons olive oil and blend briefly. Add salt and pepper to taste, dried red pepper flakes and basil; blend. The sauce is ready, but can either be refrigerated for a couple of days to blend the flavors or can be frozen. Sauce can be served cold or heated up until just warm. Exchanges: 1 1/2 Vegetable. * Exported from MasterCook * Russian Teacakes Recipe By : Serving Size : Preparation Time :0:00 Categories : Volume 10-04 Apr 2007 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup butter or margarine 1/2 cup sifted confectioner's sugar 1 teaspoon vanilla 1/2 teaspoon almond extract 2 1/2 cups flour 1/2 teaspoon salt 3/4 cup finely chopped nuts -- (pecans or walnuts) Pre-heat oven to 400F. Mix together butter, sugar, vanilla, almond extract. Stir together flour, salt and chopped nuts. Combine all ingredients into a ball and chill in refrigerator. After dough has chilled, roll into 1-inch balls and place on cookie sheet lined with parchment paper. Bake 10-12 minutes or until cookies are set but not brown. While cookies are still warm, roll in confectioner's sugar. After cookies are cool, roll a second time in confectioner's sugar. These are fast, make nice gift to give or for anytime.
