* Exported from MasterCook * Orange Ambrosia Mold from Joan's Files Recipe By : Serving Size : 12 Preparation Time :0:00 Categories : Volume 10-03 Mar 2007 Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 8 ounces crushed pineapple -- (1 can) drain and reserve juice 2 cups boiling water 11 ounces mandarin oranges -- (1 can) drained 2 packages orange Jell-O -- (4 serving each) 1 1/2 cups mini marshmallows 12 ounces Cool Whip -- (whipped topping) 1/2 cups flaked coconut -- (optional) Add drained pineapple juice to water to make one cup and set aside. Boil two cups water and dissolve in Jell-O. Stir in the one cup reserved juice and water. Refrigerate about 1 hour or mixture just starts to gel. Stir in whipped topping till smooth and refrigerate 10 minutes. Stir in drained pineapple, drained oranges and marshmallows (and coconut if using). Place in large mold. Chill 4 hours or until set. Unmold when ready. Yields 12 servings. Note : I have used this mold, the last 10 years. Everyone loves it! I have a huge collection of gelatin molds hanging in my kitchen, many from the 1960's. Although gelatin has a lot of artificial color and flavor it often makes for a great dessert and I do believe in moderation anyway!
